Foraging: Gathering Nature’s Best
Imagine the vast, rolling hills and wildflowers of Scotland, dotted with blooming heather, clover, bramble, and more. This is where our bees go to work, traveling up to three miles from the hive each day to gather nectar. The flowers they choose give each batch of honey its distinct flavour and character, like the bold earthiness of heather and the light floral notes of clover. This diversity of plants makes each jar truly unique, a reflection of the landscape itself.
Bees are nature’s little adventurers; each one visits thousands of flowers daily to collect the nectar that eventually becomes honey. Inside the Hive: Where Magic Happens
Inside the hive, our bees work together to transform the nectar. They deposit it into honeycomb cells and fan their wings to create airflow, which causes the nectar to thicken. The result is a dense, delicious honey packed with natural sweetness. When it’s just right, the bees seal the cells with wax, creating a perfect storage system. This honey is rich in flavour and full of beneficial enzymes, antioxidants, and nutrients.

Harvesting the Honey
At The Moray Honey Company, harvesting honey is done with patience and care. We wait until the honeycomb cells are fully capped, indicating that the honey has reached its perfect consistency. Then, we gently remove the frames from the hive, uncap the wax, and place them in a centrifugal spinner, which extracts the honey without using any heat. This way, we maintain the raw, nutrient-rich quality of the honey, keeping it as close to nature as possible.
From Hive to Jar
Once we extract the honey, it goes through a light straining process to remove any residual wax. That’s it—no pasteurisation, no heavy filtering, just pure honey with all its natural enzymes, antioxidants, and rich flavour intact. We bottle it straight from the hive to jar, capturing the full essence of the season’s blooms and the beautiful Scottish countryside.
